Squash it!

Definitely got me a case of this!!!!

Just a very quick blog today as not much time, but more than anything wanted to share the recipe for my dinner tonight, which was awesome!!

Had a fab day today, woke up with DOMS once again in my thighs following my rowing session yesterday, shows once again other muscles are being incorporated, love the messages my body gives me!

~BREAKFAST~

 
A beautiful vibrant breakfast today of fresh cherry tomatoes on toast with salt, black pepper and a drizzle of coriander pesto.

~LUNCH~
 
Using one of my leftover homemade seeded wholemeal wraps from last night, I spread half a soft avocado over it, topped with some fresh spinach and prawns and finished with a squeeze of lime and a sprinkle of paprika. 

Wrapped it up.... and ate it!!!  Gorgeous.






~DINNER~
 

Dinner was an experiment tonight.  A Quorn bolognese spaghetti bake ... with no pasta!!!

Using spaghetti squash, a brilliant squash that you roast whole for about 45 minutes, then when soft cut it in half and using two forks simply shred the 'innerds', simple as.  Really looks like cooked spaghetti!

I made a bolognese using Quorn mince, chopped onion, asparagus, courgette, peppers and mushrooms with some balsamic drizzled, a can of chopped tomatoes and a tablespoon of sundried tomato paste.

Put the 'spaghetti' in a large ovenproof dish and top with the Quorn bolognese, them mix it all together.

Top with some shredded half fat mozzarella cheese and bake in the oven at about 160oc for approx 35-40 minutes,

I didn't tell my husband it wasn't pasta until he had cleared his plate .. shows that he loved it too!!

I had used spaghetti squash once before when I followed the Dukan diet, but I just roasted it, shredded it and topped it with some sauce.  I found it a bit bitter then so mixing it together like this made a big difference.  I have read that others add butter to it, but that kind of defeats my object!!  May try some rapeseed oil and black or white pepper and parmesan another time.

Have saved the seeds too to roast off!!



~EXERCISE~
 
So,what's the best thing to do when you have very achey thighs .... swim 110  lengths ofcourse!!!!!  Seemed like a good idea at the time, didn't hurt whilst in the water ... am paying for it a bit now though.
 
Pool was empty today, me and one other person the whole time and I selfishly love it like that, I can just swim and swim and swim, which I obviously did.  Most of them under water too and a lot of varying strokes.  A brilliant work out for my whole body.
